Ingredients

  • 1 ½ Tablespoons granulated sugar
  • 2 Tablespoons water

Instructions

  1. Make the Butterfly Pea Flower-Infused Water: In a small saucepan, bring 1 ½ cups of water to a boil over high heat. Remove from heat and add 1 teaspoon of butterfly pea flower powder. Whisk thoroughly until the powder is completely dissolved.
  2. Cool: Transfer the infused water into a heatproof container and let it cool to room temperature, which will take about an hour. Refrigerate if preferred to speed up cooling.
  3. Make the Sweetened Lemon Juice: While the butterfly pea flower water cools, combine ¼ cup of fresh lemon juice, 1 ½ tablespoons of granulated sugar, and 2 tablespoons of water in a mixing glass. Stir well until the sugar is dissolved.
  4. Chill Sweetened Lemon Juice: Place the sweetened lemon juice in the refrigerator until the butterfly pea flower water reaches room temperature to ensure both components are cool when mixed.
