Description

This Coffee Cheesecake combines the rich, creamy texture of classic cheesecake with a bold espresso-infused Oreo crust and a silky chocolate ganache topping. Perfectly baked for a smooth, crack-free finish, it's a decadent dessert that coffee and chocolate lovers will adore.

Ingredients

Crust

  • 14 whole Oreos
  • 1/2 teaspoon instant espresso powder
  • 3 tablespoons unsalted butter, melted

Cheesecake Filling

  • 2 8-ounce packages of cream cheese, at room temperature
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant espresso powder
  • 1 large egg, at room temperature

Chocolate Ganache

  • 1 cup chocolate chips
  • 1 cup heavy cream

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 300°F (150°C). Line a 9 x 5 x 3-inch loaf pan with parchment paper along the two longest sides. Brush a light layer of oil on the exposed sides of the pan to prevent sticking.
  2. Make the Crust: Crush the Oreos finely using a food processor or by placing them in a plastic bag and crushing with a rolling pin. In a medium bowl, combine the crushed Oreos, 1/2 teaspoon instant espresso powder, and melted butter until thick and paste-like. Press this mixture evenly into the bottom of the prepared loaf pan to form the crust.
  3. Beat Cream Cheese and Sugar: Using an electric mixer on medium speed, beat the room temperature cream cheese and sugar together until the mixture is light and fluffy, which ensures a smooth and airy cheesecake.
  4. Dissolve Espresso Powder: In a small bowl, dissolve 1 tablespoon instant espresso powder in one tablespoon of warm water to create a concentrated espresso mix.
  5. Combine Flavors: Add the vanilla extract and espresso mixture to the cream cheese mixture and mix until just combined to infuse coffee flavor evenly.
  6. Add Egg Carefully: Crack the large egg into the bowl and gently incorporate it without over-beating to avoid incorporating excess air, which can cause cracks during baking.
  7. Bake the Cheesecake: Pour the cheesecake batter over the crust in the pan. Bake for 30-35 minutes until the surface is set and not sticky to the touch. A toothpick inserted should come out clean, indicating doneness.
  8. Cool the Cheesecake: Let the cheesecake cool near the oven to prevent sudden temperature changes that can cause cracks. Once fully cooled to room temperature, refrigerate the cheesecake for at least 4 hours to set completely.
  9. Prepare Chocolate Ganache: Heat the heavy cream gently in a small saucepan until it simmers but does not boil. Place the chocolate chips in a separate bowl. Pour the hot cream over the chocolate chips, let sit for 1 minute to soften, then whisk until smooth and glossy.
  10. Top and Serve: Spread the chocolate ganache evenly over the chilled cheesecake. Chill in the refrigerator for a few minutes to allow the ganache to set before slicing and serving.

Notes

  • Use room temperature cream cheese and egg for a smoother batter and better texture.
  • To avoid cracks on the cheesecake surface, do not overbeat the egg and avoid sudden temperature changes while cooling.
  • The Oreo crust can be pressed firmly to ensure it holds together well as a base.
  • If you prefer a stronger coffee flavor, you can add a bit more instant espresso powder to the filling but be cautious as it can be overpowering.
  • For cleaner slices, chill the cheesecake thoroughly before serving and use a warm knife to cut.
