Description

Instructions

  1. Process Cashews: In a food processor, pulse the raw cashews until they have a fine grain-like texture, similar to coarse flour.
  2. Form Dough: Add the pitted dates, dried mango pieces, shredded coconut, vanilla extract, and a dash of sea salt to the cashews. Blend everything together until a sticky dough starts to form. If the mixture seems too dry or crumbly, add water a tablespoon at a time and process further to help bind.
  3. Roll into Balls: Using your hands, tightly pack the mixture and roll it into small bite-sized balls. Firmly pressing them will help the bites hold their shape well.
  4. Chill: Place the rolled balls in the freezer for 5-10 minutes to let them firm up and set.
  5. Optional White Chocolate Drizzle: If desired, melt the white chocolate chips in the microwave in 20-second increments until smooth. Pour the melted chocolate into a plastic or frosting bag, cut a small corner, and drizzle it over each bite for extra flair and sweetness.
  6. Storage: Store any leftovers in an airtight container in the refrigerator for up to 7-10 days or at room temperature for 4-5 days.
