  • 3 green onions, chopped
  • 1 cucumber, peeled and sliced

  • 1 mango, peeled and chopped
  • 1 avocado, peeled, seeded and chopped

Chicken Ingredients

  • 6-8 small chicken tenders
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 1/2 cups shredded sweetened coconut
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Creamy Pineapple Vinaigrette

  • 1/2 cup fresh pineapple, diced
  • 1/4 cup plus 2 Tablespoons canned unsweetened coconut milk
  • 3 Tablespoons Greek yogurt
  • 1 Tablespoon olive oil
  • 1 1/2 teaspoons red wine vinegar
  • 1-2 teaspoons honey
  • Dash of salt and pepper


Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the chicken.
  2. Prepare Baking Setup: Line a 10x15-inch jelly roll pan with tinfoil and place a wire cooling rack on top. Spray the wire rack generously with cooking spray to prevent sticking.
