Description

Citrus Melon Mingle is a refreshing and vibrant fruit salad that combines the natural sweetness of cantaloupe, honeydew, bananas, and pineapple with the tangy zest of grapefruit and navel oranges. Enhanced with fresh mint, ginger, and a drizzle of honey, this chilled fruit salad is perfect for a light snack or a healthy dessert, celebrating summery flavors in just 20 minutes.


Ingredients

Fruits

  • 1-1/2 cups cubed cantaloupe
  • 1-1/2 cups cubed honeydew
  • 2 medium grapefruit, peeled and sectioned
  • 2 medium navel oranges, peeled and sectioned
  • 2 firm bananas, sliced
  • 1 can (8 ounces) unsweetened pineapple chunks, undrained

Additional Ingredients

  • 1/2 cup orange juice
  • 2 tablespoons honey
  • 1 tablespoon minced fresh mint or 1 teaspoon dried mint
  • 1 teaspoon minced fresh gingerroot


Instructions

  1. Prepare Fruits: Peel, cube, and slice the cantaloupe, honeydew, grapefruit, navel oranges, and bananas as described, ensuring the grapefruit and oranges are sectioned properly to remove pith and membranes.
  2. Combine Ingredients: In a large bowl, gently combine all the prepared fruits along with the canned pineapple chunks including the juice.
  3. Add Flavorings: Pour in the orange juice and drizzle the honey over the fruit mixture. Sprinkle minced fresh mint and fresh gingerroot on top. Toss everything lightly to mix flavors without bruising the fruit.
  4. Chill: Cover the bowl with a lid or plastic wrap and refrigerate for at least 20 minutes to allow the flavors to meld and the salad to chill before serving.

Notes

  • For best flavor, use fresh and ripe fruits.
