  • 1 medium head of cauliflower (chopped into florets)
  • ½ medium white onion (chopped)

  • ½ cup finely chopped cilantro (divided)
  • 1 lime (zested then juiced)

  • 2 Tablespoons (30 milliliters) avocado oil
  • 2 Tablespoons low-sodium chicken broth (or vegetable broth for vegetarian and vegan)
  • ½ teaspoon salt
  • ¼ teaspoon pepper


Instructions

  1. Pulse Cauliflower: Place the cauliflower florets into a food processor and pulse until the texture resembles rice. Depending on your food processor size, you may need to work in batches. Set the riced cauliflower aside.
  2. Saute Onion And Jalapeño: Heat avocado oil in a large pan over medium heat. Add the chopped onion and optional jalapeño, cooking until softened, about 3 minutes.
  3. Add Minced Garlic: Stir in minced garlic and cook until fragrant, approximately 30 to 60 seconds, ensuring not to burn it.
  4. Cook Cauliflower Rice: Turn the heat to high and add the riced cauliflower, half of the chopped cilantro, chicken broth, salt, and pepper. Stir well to combine and cook for 1 minute on high heat to warm through.
  5. Final Steps And Serve: Remove the pan from heat. Stir in the remaining cilantro, lime zest, and lime juice to infuse fresh citrus flavors. Serve immediately as a light and tasty side.
