Instructions
- Prepare the mold: Spray a loaf pan with nonstick cooking spray and line it with plastic wrap, leaving an overhang on all sides for easy removal of the semifreddo later.
- Mix espresso with vanilla: In a small bowl, dissolve the instant espresso powder in the vanilla extract to infuse the flavor.
- Whisk eggs, sugar, and salt: In a medium bowl, whisk together the eggs, sugar, and salt until well combined to build the custard base.
- Cook custard mixture: Heat ½ cup of heavy cream with water in a medium saucepan until warm. Gradually whisk the warm cream mixture into the egg mixture. Return the combined mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens slightly and reaches 160-165°F (71-74°C). Avoid boiling or simmering to prevent curdling.
- Melt chocolate: Pour the cooked custard through a mesh strainer onto the chopped chocolate. Let it stand for 4 to 5 minutes to allow the chocolate to melt fully. Stir gently until smooth.
