Ingredients
Crust:

- 1/2 cup heavy whipping cream
Ganache:
- 3/4 cup semisweet chocolate chips
- 1/2 cup heavy whipping cream
- Crystallized ginger, chopped, optional
Instructions
- Mix the crust ingredients: In a large bowl, whisk together the all-purpose flour, sugar, baking cocoa, pumpkin pie spice, and salt. Stir in the melted butter until the mixture is crumbly.
- Shape and bake the crust: Press the crust mixture onto the bottom and up the sides of a 10-inch tart pan with a removable bottom using a 1/4 measuring cup to gently press it evenly. Place the tart pan on a baking sheet and bake in a preheated oven at 425°F for 10 minutes. Remove from oven and let cool to room temperature on a wire rack, keeping the oven on.
- Mix the filling: In another large bowl, whisk together the canned pumpkin, eggs, dark brown sugar, grated orange zest, pumpkin pie spice, and salt until well combined. Slowly whisk in the heavy whipping cream to prevent lumps, stirring continuously.
- Bake the tart: Pour the filling into the cooled crust. Bake at 425°F for 15 minutes, then without opening the oven door, reduce the temperature to 350°F and continue baking for 40 to 45 minutes until the filling is set. Remove from oven and let cool on a wire rack to room temperature.
