  3. Mix milk with cream cheese: Warm 2 ounces of cream cheese with 1/4 cup of milk in the microwave for about 20 seconds to soften. Whisk this mixture until smooth, then add 1/4 teaspoon sea salt and whisk again. Set aside.
  4. Create the ice cream base: In a medium saucepan, combine the remaining 1 3/4 cups of milk, 1 cup heavy cream, 1/2 cup unsweetened cocoa powder, 2/3 cup sugar, and 2 tablespoons honey. Whisk the mixture well to combine.
  5. Heat the mixture: Place the saucepan over medium heat and bring the mixture to a gentle simmer, whisking frequently to prevent burning. Once simmering, reduce the heat and let it simmer for 4 minutes, then remove from heat.
