Description

These delicious Peanut Clusters combine creamy melted white and semi-sweet chocolates with crunchy roasted salted Spanish peanuts, making for an irresistible, easy-to-make candy treat perfect for snacking or gifting.

Ingredients

Chocolate

  • 16 oz white chocolate
  • 12 oz semi-sweet chocolate

Peanuts

  • 1 ½ lb roasted and salted Spanish peanuts

Instructions

  1. Melt Chocolates: Place the white and semi-sweet chocolates in a heatproof bowl set over simmering water, making sure the water does not touch the bottom of the bowl to prevent scorching. Stir continuously until the chocolates are fully melted and smooth.
  2. Mix Peanuts: Remove the bowl from heat and quickly stir in the roasted and salted Spanish peanuts, coating them completely in the melted chocolate mixture.
  3. Form Clusters: Using two spoons, drop about 2 tablespoons of the peanut-chocolate mixture onto parchment-lined baking sheets to form clusters.
  4. Set Clusters: Allow the clusters to cool completely at room temperature until the chocolate is fully set and firm.
  5. Store Properly: Transfer the peanut clusters to an airtight container. Store at room temperature for up to 1 week or chill in the refrigerator to keep fresh for up to 3 weeks.

Notes

  • Ensure the chocolate doesn't come in direct contact with water to avoid seizing.
  • Use good quality chocolate for best flavor and texture.
  • You can substitute Spanish peanuts with other nuts if desired, but adjust quantities and salt accordingly.
  • Clusters can be refrigerated to harden faster if desired but allow to come to room temperature before serving for best texture.
