Dry Ingredients

  • 1 3/4 cups all purpose flour

  • 1/2 cup packed brown sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla paste or extract
  • 3/4 cup half and half or buttermilk

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a 9x5 inch loaf pan and line it with parchment paper. This will make it easier to remove the bread after baking.
  2. Sift Dry Ingredients: In a separate bowl, sift together the all purpose flour, baking powder, baking soda, and salt. Set this mixture aside.
  3. Mix Wet Ingredients: In a large mixing bowl, whisk or beat together the creamy peanut butter, packed brown sugar, vegetable oil, egg, and vanilla extract or paste. Make sure everything is combined evenly and the mixture is smooth.
  4. Combine Dry and Wet Ingredients: Add the sifted dry ingredients alternately with the half and half (or buttermilk) into the peanut butter mixture, starting and ending with the dry ingredients. Fold in 1 cup of the chocolate chips gently to distribute without overmixing.
  5. Fill Pan and Add Topping: Spread the batter evenly into the prepared loaf pan and smooth the top with a spatula. The batter may appear slightly greasy. Sprinkle the remaining 1/3 cup chocolate chips evenly over the top.
