Salted Caramel Frosting

  • 1 cup vegan butter, room temperature (or ghee/unsalted butter)
  • 1/2 cup vegan caramel sauce (homemade or store bought)
  • 4 1/2 cups powdered sweetener (or powdered sugar such as Lakanto or Swerve)
  • 2 tablespoons dairy-free creamer (or thick coconut milk or heavy cream)

Chocolate Ganache

  • 8 ounces dairy-free chocolate, finely chopped (or semi-sweet/bittersweet chocolate)
  • 1/2 cup dairy-free creamer (or thick coconut milk or heavy cream)
  • 2 tablespoons vegan butter (or ghee/unsalted butter)

Toppings & Assembly

  • 1 banana, peeled and thinly sliced
  • 1/2 cup shredded unsweetened coconut, toasted
  • vegan caramel sauce (homemade or store-bought, for drizzling)


Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Lightly coat three 8-inch cake pans with oil or non-stick spray and line the bottoms with parchment paper for easy removal.
  2. Mix Wet Ingredients: In a large mixing bowl, beat the eggs until combined. Add the mashed bananas and granulated maple sugar, beating until smooth. Stir in the unsweetened almond milk, avocado oil (or chosen oil), and apple cider vinegar to the mixture.
  3. Sift and Combine Dry Ingredients: Place a fine mesh sieve over the wet ingredient bowl and sift in superfine almond flour, tapioca flour, coconut flour, cacao powder, baking soda, and fine sea salt.
