Description

This chipotle burger recipe features juicy, flavorful beef patties infused with smoky chipotle peppers and spices, topped with melted Colby Jack or Pepper Jack cheese, and complemented by a zesty homemade chipotle mayo sauce. Perfect for a quick and delicious grilled burger meal that packs a spicy kick.

Ingredients

Burgers:

  • 1 lb ground beef
  • 2 canned chipotle peppers, finely chopped
  • 1 tablespoon adobo sauce
  • 2 tablespoons minced yellow onion
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 4 slices Colby Jack or Pepper Jack cheese
  • 4 brioche buns (sesame or onion)
  • Burger toppings such as lettuce and sliced tomato

Sauce:

  • ¾ cup mayonnaise
  • Juice of half a lime
  • 2 teaspoons honey
  • 2 teaspoons adobo sauce
  • 2 garlic cloves, minced
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Burger Mix: In a mixing bowl, combine ground beef, chopped chipotle peppers, adobo sauce, minced yellow onion, garlic powder, ground cumin, smoked paprika, kosher salt, and black pepper. Mix well until all ingredients are evenly distributed. Form the mixture into 4 equal patties, and press your knuckle into the center of each to create a small indentation to prevent puffing during cooking.
  2. Cook the Patties: Heat a grill pan over medium-high heat. Place the patties on the pan and cook for 3 to 5 minutes on each side, or until they reach your preferred doneness. Cooking time may vary depending on patty thickness.
  3. Melt the Cheese and Rest: Once cooked, place a slice of Colby Jack or Pepper Jack cheese onto each patty. Remove the patties from the pan and transfer them to a plate covered loosely with foil to rest and allow the cheese to melt.
  4. Make the Chipotle Sauce: In a small bowl, whisk together mayonnaise, lime juice, honey, adobo sauce, minced garlic, smoked paprika, salt, and pepper until smooth. Adjust seasoning to taste.
  5. Assemble the Burgers: Toast the brioche buns lightly if desired. Spread a generous amount of the chipotle sauce on both halves of each bun. Place the cheese-topped patty on the bottom bun, then add your choice of toppings such as lettuce and sliced tomato. Top with the bun lid and serve immediately.

Notes

  • For extra smoky flavor, consider using smoked sea salt instead of regular kosher salt.
  • Ensure not to overmix the ground beef to keep patties tender and juicy.
  • You can substitute mayonnaise with Greek yogurt for a lighter sauce alternative.
  • If you don’t have a grill pan, cooking patties on a cast-iron skillet or outdoor grill works equally well.
  • Adjust the number of chipotle peppers and adobo sauce to control the spiciness level to your preference.
