Description

This Chickpea Cranberry Salad features a creamy feta dressing that perfectly balances tangy, sweet, and savory flavors. Packed with crunchy celery, sweet apples, juicy grapes, and toasted walnuts, this hearty and refreshing salad is quick to make and ideal for a nutritious lunch or picnic dish. The tangy feta dressing brings everything together with a luscious creaminess, while the dried cranberries add a delightful pop of sweetness.

Ingredients

Salad Ingredients

  • 1 can chickpeas (drained and rinsed – 15 oz / 400 g can or 1½ cups cooked chickpeas)
  • ½ cup dried cranberries
  • 2 ribs celery (chopped)
  • 1 apple (honeycrisp or pink lady, chopped)
  • 1 heaping cup red grapes (seedless, halved)
  • ½ small red onion (chopped)
  • ¼ cup fresh parsley (chopped)
  • ½ cup toasted walnuts or pecans (chopped)

For the Creamy Feta Dressing

  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons apple cider vinegar (can substitute lemon juice or red wine vinegar)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • ¼ teaspoon salt (adjust to taste, remember feta adds saltiness)
  • Black pepper to taste
  • 1 cup feta cheese (crumbled)

Instructions

  1. Make the Dressing: In a large bowl, whisk together the extra virgin olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until smooth. Crumble in the feta cheese and stir gently to create a creamy, tangy dressing.
  2. Marinate the Chickpeas: Drain and rinse the canned chickpeas thoroughly. Add them to the bowl with the dressing and toss until they are well coated. Let the mixture sit for at least 10 minutes to allow the flavors to meld.
  3. Add the Crunchy Ingredients: Chop the celery ribs, apple, red onion, and fresh parsley. Halve the grapes and chop the toasted walnuts or pecans. Add these ingredients along with the dried cranberries to the bowl. Toss everything together until the salad looks glossy and all ingredients are evenly mixed. Taste and adjust vinegar, honey, or salt if needed.
  4. Serve or Chill: Serve the salad immediately from the bowl or transfer to a serving platter. For best flavor, chill in the refrigerator if making ahead and take out 30 minutes before serving to let the flavors bloom.

Notes

  • The salad tastes better after sitting for at least 10 minutes to marinate.
  • Use seedless grapes and a sweet apple variety like honeycrisp or pink lady for best flavor.
  • Adjust the salt carefully since feta cheese is quite salty.
  • Can be made ahead and refrigerated for up to 1 day.
  • Swap walnuts for pecans if preferred for the crunch.
  • This salad pairs well with grilled chicken or as a stand-alone vegetarian meal.
