Description

Delicious and easy Chicken Souvlaki made with tender marinated chicken thigh fillets, fresh salad, tzatziki, and crumbled feta cheese, wrapped in warm Greek-style flatbreads. Perfect for a flavorful Mediterranean meal ready in about 1.5 hours including marinating time.


Ingredients

Chicken Marinade

  • 500 g (17 1/2 oz) chicken thigh fillets (about 6 fillets, chopped into cubes)
  • 2 tbsp olive oil
  • 2 garlic cloves (peeled and crushed)
  • Zest and juice of 1 medium lemon (approx. 2 tbsp lemon juice)
  • 1/2 tsp salt
  • 1/2 tsp dried dill (or 1/2 tbsp fresh dill, chopped)

Salad

  • 1/2 a large cucumber (chopped into small chunks)
  • 100 g (3 1/3 cups) Cos or Romaine lettuce (shredded)
  • 2 large tomatoes (chopped into small chunks)
  • 1/4 red onion (peeled and cut into slices)
  • A squeeze of lemon juice (optional)

Serving

  • 4 Greek-style flatbreads (or homemade flatbreads), toasted if desired
  • Tzatziki (homemade or store-bought)
  • 100 g (3 1/2 oz) feta cheese (crumbled)


Instructions

  1. Marinate the Chicken: Add the chicken cubes and all marinade ingredients (olive oil, garlic, lemon zest and juice, salt, dill) to a bowl. Stir to combine thoroughly, cover, and refrigerate for 1 to 2 hours to allow flavors to develop.
  2. Prepare the Salad: In a large bowl, combine the chopped cucumber, shredded lettuce, chopped tomatoes, and sliced red onion. Toss together and add a squeeze of lemon juice if desired for extra freshness.
  3. Cook the Chicken on Griddle or Frying Pan: Heat a griddle or frying pan over high heat until very hot. Remove marinated chicken from the fridge and place it in a single layer on the griddle. It should sizzle immediately. Cook for a couple of minutes until browned, then flip using tongs and continue cooking until the chicken is fully cooked and no longer pink inside, verified by cutting a larger piece in half.
  4. Cook the Chicken in Air Fryer (Alternate Method): Preheat your air fryer to 200°C (400°F). Lightly spray or brush the air fryer basket with oil. Place the marinated chicken pieces in the basket in a single layer and lightly spray or brush the top with oil. Air fry for 15 to 18 minutes, tossing once halfway through cooking. Ensure chicken is cooked through and no longer pink inside.
  5. Optional Lemon Zest: After cooking, squeeze the juice of half a lemon over the hot chicken for added zing if desired.
  6. Assemble the Souvlaki Wraps: Place the warm flatbreads on plates. Divide the cooked chicken evenly among them. Add a portion of the fresh salad on top of the chicken, a generous spoonful of tzatziki, and sprinkle crumbled feta cheese over each wrap.
  7. Serve: Roll up the wraps tightly and serve immediately with the remaining salad and tzatziki on the side for extra flavor and freshness.
