Ingredients
Chicken
- 1 pound Foster Farms® Organic Chicken Thin-Sliced Breast Fillets
- 2 teaspoons organic olive oil
- Salt and pepper to taste
Pasta and Vegetables
- 10 ounces organic linguine pasta
- 1 cup organic asparagus spears, trimmed and cut into 3 inch pieces
- 1 cup organic baby carrots (or regular carrots thinly sliced, peeled and halved)
- 1/2 cup organic fresh or frozen peas
Sauce and Garnish
- 4 tablespoons organic butter
- 1 tablespoon organic lemon juice
- 2 tablespoons organic chopped parsley
- Optional: lemon wedges for garnish
Instructions
- Heat the oil: Heat the organic olive oil in a large pan over medium-high heat to prepare for cooking the chicken.
- Season the chicken: Generously season both sides of the chicken breasts with salt and pepper to enhance flavor.
- Cook the chicken: Place the chicken breasts in the pan and cook for 4-5 minutes per side until golden brown and cooked through. Remove from pan and slice crosswise into strips.
- Cook the pasta and vegetables: Prepare the linguine pasta in salted boiling water according to package directions. About 4 minutes before the pasta is done, add the carrots, asparagus, and peas to the boiling water to cook together.
- Drain and reserve liquid: Drain the pasta and vegetables, reserving 1/4 cup of the pasta cooking water for the sauce.
- Make the sauce and combine: Return the pasta and vegetables to the pot and set over low heat. Stir in the butter and lemon juice to coat everything evenly. Add the reserved pasta water 1 tablespoon at a time until the sauce reaches your desired consistency. Season with additional salt and pepper to taste.
- Serve: Arrange the sliced chicken on top of the pasta and vegetable mixture, sprinkle with chopped parsley, and serve with optional lemon wedges for extra zest.
Notes
- You can substitute regular carrots if baby carrots are unavailable; just make sure to thinly slice and peel them for even cooking.
- Adding the vegetables 4 minutes before pasta finishes ensures they stay tender-crisp and retain their bright color.
- Adjust the amount of reserved pasta water to make the sauce thinner or thicker according to your preference.
- Lemon wedges add a fresh and tangy note if you like a bit more citrus flavor.
- Using thin-sliced chicken breasts helps the meat cook quickly and stay tender.
