Ingredients

Chicken

  • 4 boneless skinless chicken thighs (or breasts)
  • 1 tbsp olive oil

Vegetables & Aromatics

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced (any color)
  • 1 zucchini, sliced
  • 1 cup mushrooms, sliced

Sauce

  • 14 oz crushed tomatoes
  • 1 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil

Garnish

Instructions

  3. Add the Sauce Ingredients: Stir in the crushed tomatoes, chicken broth, dried oregano, and dried basil. Bring the mixture to a simmer on medium heat.
  4. Combine Chicken and Sauce: Return the seared chicken pieces to the skillet, ensuring they are submerged in the sauce. Reduce the heat to low, cover the skillet, and let it simmer gently for 25-30 minutes, or until the chicken is cooked through and tender.
  5. Serve and Garnish: Taste the sauce and adjust seasoning with salt and pepper if needed. Serve the chicken cacciatore over whole-grain pasta, quinoa, or alongside a fresh salad. Garnish with chopped fresh parsley before serving.
