Crumb Topping
- 2/3 cup all-purpose flour
- 2/3 cup sugar
- 1/2 teaspoon cinnamon
- 5 tablespoons salted butter, melted
- 1/2 teaspoon pure vanilla extract
Cake Batter
- 2 1/2 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 1/2 teaspoons pure vanilla extract
- 10 tablespoons butter, room temperature
- 1 1/4 cups sugar
- 2 large eggs, room temperature
- 1 1/2 lbs fresh bing cherries, stems removed, pitted, and halved or quartered
Instructions
- Prepare the cherries: Remove the stems and pits from the fresh bing cherries and slice them in halves or quarters. Set aside for later use.
- Preheat and prepare the pan: Preheat your oven to 350°F (175°C). Butter and flour a springform pan, even if it is nonstick, to ensure the cake doesn't stick.
- Make the crumb topping: In a medium bowl, combine the flour, sugar, cinnamon, melted butter, and vanilla extract. Mix well until cohesive. Place the bowl in the freezer to keep cold until ready to use.
- Mix dry ingredients for the cake: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- Mix wet ingredients for the cake: In a smaller bowl, mix the buttermilk with the vanilla extract and set aside.
- Cream butter and sugar: In a large mixing bowl or the bowl of a stand mixer, beat the room temperature butter with sugar until the mixture becomes light and fluffy, approximately 2-3 minutes.
- Add eggs: Reduce mixer speed to low, then add the eggs one at a time, mixing well after each addition to incorporate fully.
