Ingredients
Filling
- 2 cups cooked shredded chicken
- 6 ounces cream cheese (softened)
- ¼ cup red salsa
- ¼ cup sour cream
- 1 cup shredded cheddar cheese
- ¼ teaspoon cumin
- ¼ teaspoon chili powder
- ¼ teaspoon garlic powder
- Salt & pepper (to taste)
Assembly
- 10-15 flour tortillas
For Frying
- Vegetable oil (enough to fill 1-2 inches in skillet)
Instructions
- Prepare the filling: In a large bowl, mix the softened cream cheese, red salsa, and sour cream until they are well combined, creating a smooth base.
- Add chicken and spices: Pour the shredded chicken, shredded cheddar cheese, cumin, chili powder, garlic powder, salt, and pepper into the cream cheese mixture. Gently fold until all ingredients are evenly incorporated.
- Assemble taquitos: Lay out a flour tortilla and spoon approximately 2 tablespoons of the filling onto it. Adjust the amount if you prefer thicker or thinner taquitos. Roll the tortilla tightly around the filling using your fingers, ensuring a snug roll.
- Heat the oil: Pour 1-2 inches of vegetable oil into a large skillet and heat it over medium-high heat. Wait until the oil is hot but not smoking before cooking.
- Fry the taquitos: Carefully place 2-3 taquitos at a time into the hot oil. Fry them evenly by rotating them regularly until all sides turn golden brown and crisp. Remove and drain on paper towels to absorb excess oil.
- Serve warm: Enjoy the crispy chicken taquitos immediately while warm for the best flavor and texture.
Notes
- For a healthier option, you can bake the taquitos at 425°F (220°C) for 15-20 minutes, turning halfway through.
- Use corn tortillas for a gluten-free version, but warm them first to prevent cracking while rolling.
- Adjust the chili powder to your preferred spice level.
- Leftover taquitos can be reheated in a skillet or oven to maintain crispiness.
