Ingredients
Cheese and Garnishes
- 1 cup shredded cheddar and mozzarella blend
- 1/2 cup chopped green onions
- 1 cup shredded cheddar and mozzarella blend (for topping)
- 1/2 cup chopped green onions (for topping)
Main Ingredients
- 1 lb lean ground beef
- 16 oz potato gnocchi
- 1 tablespoon minced garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon onion powder
- 10 oz Rotel diced tomatoes and green chilies
- 3/4 cup milk
- 10.5 oz cheddar soup
Instructions
- Cook the Ground Beef: Dump the ground beef into a large skillet over medium-high heat. Crumble it well as it cooks until fully browned.
- Add the Gnocchi: Once the beef is cooked, add the potato gnocchi to the skillet. Stir well and cook until the gnocchi begin to brown slightly on the bottom.
- Season and Stir: Add the minced garlic, salt, pepper, and onion powder to the skillet. Stir well to combine all the flavors.
- Add Rotel Tomatoes: Pour in the Rotel diced tomatoes and green chilies and stir everything together again.
- Add Milk and Boil: Add the milk to the skillet, stir, and bring the mixture to a boil over medium-high heat.
- Simmer Covered: Place a lid on the skillet and reduce the heat to medium-low. Let the gnocchi simmer for 5 minutes to allow flavors to meld and the gnocchi to soften further.
- Incorporate Cheddar Soup: Remove the lid and stir well. Add the cheddar soup to the skillet and mix thoroughly.
- Add Cheese and Green Onions: Stir in the chopped green onions and shredded cheddar and mozzarella blend until the cheese melts into the sauce and mixture.
- Top and Melt Cheese: Sprinkle additional shredded cheese and chopped green onions evenly over the top. Return the lid to the skillet just until the cheese on top melts.
- Serve: Remove from heat and serve hot. Enjoy your creamy, cheesy cheeseburger gnocchi!
Notes
- Use lean ground beef to reduce excess grease and keep the dish healthier.
- For a spicier kick, use hot Rotel diced tomatoes instead of mild.
- If you prefer, substitute the cheddar soup with a homemade cheese sauce for a fresher taste.
- The simmering step allows the gnocchi to absorb flavors and ensures they are cooked perfectly tender.
- Leftovers can be stored refrigerated for up to 3 days and reheated on the stovetop or microwave.
