Ingredients
Peanut Sauce
- ½ cup creamy peanut butter
- 3 tablespoons red wine vinegar
- 2½ tablespoons low sodium soy sauce
- 2 tablespoons light brown sugar
- 2 tablespoons vegetable oil
- ½ teaspoon ground ginger
- 1 teaspoon garlic powder
- ⅛ teaspoon cayenne pepper
Stir-Fry
- 24 ounces Celentano Cheese Ravioli (cooked according to package instructions)
- 1 tablespoon vegetable oil
- 4 cups broccoli, trimmed
- 1½ cups sugar snap peas, trimmed
- 1 large red bell pepper, sliced
- 1 teaspoon sesame oil
Instructions
- Make the peanut sauce: In a small saucepan, combine creamy peanut butter, low-sodium soy sauce, red wine vinegar, vegetable oil, light brown sugar, ground ginger, garlic powder, and cayenne pepper. Stir the ingredients until well blended.
- Simmer the sauce: Place the saucepan over medium heat and bring the mixture to a simmer, stirring continuously. Allow it to cook for about 2 minutes until it thickens slightly. Remove from heat and set aside.
- Prepare the ravioli: Cook the Celentano Cheese Ravioli according to the package instructions, then drain and set aside.
- Heat the skillet: Warm a wok or large skillet over medium-high heat and add 1 tablespoon of vegetable oil.
- Cook the vegetables: Add the sliced red bell pepper, broccoli, and sugar snap peas to the skillet. Stir-fry for 4-5 minutes until the vegetables become tender but still crisp.
- Add cooked ravioli: Gently fold the cooked cheese ravioli into the vegetable mixture, combining them evenly.
- Incorporate the peanut sauce: Pour the prepared peanut sauce into the skillet and stir gently to coat all the ingredients thoroughly with the sauce.
- Finish with sesame oil: Drizzle 1 teaspoon of sesame oil over the stir-fry and cook for an additional minute, allowing all the flavors to meld and everything to heat through. Serve immediately.
Notes
- Be careful not to overcook the vegetables; they should remain crisp for the best texture.
- You can adjust the cayenne pepper quantity to make the dish more or less spicy.
- If you prefer, substitute peanut butter with almond butter for a different nutty flavor.
- This dish can be made gluten-free by using gluten-free soy sauce and ensuring the ravioli is gluten-free.
- For a vegan version, replace cheese ravioli with a plant-based ravioli alternative.
