Description

A quick and delicious Cheese and Onion Toastie featuring caramelized onions infused with thyme and balsamic vinegar, layered with melted cheddar cheese inside crispy buttered bread slices. Perfect for a comforting snack or light meal ready in just 15 minutes.


Ingredients

Onion Mixture

  • 1 small yellow onion, sliced
  • 1/2 teaspoon fresh thyme
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste

Toastie

  • 4 slices bread
  • 3 tablespoons butter, divided
  • 1/2 cup cheddar cheese, shredded


Instructions

  1. Sauté Onions: Melt 1 tablespoon of butter in a pan over medium heat. Add the sliced onions and sauté for 2-3 minutes until they become transparent and start to brown slightly on the edges.
  2. Caramelize Onions: Cook the onions without stirring for 2-3 minutes more, allowing them to brown at the bottom of the pan. Add a splash of water to deglaze, stirring to scrape up browned bits. Repeat this process for about 8 minutes until the onions turn a deep caramelized brown color.
  3. Prepare Pan for Toasties: Remove the caramelized onions from the pan and keep the pan heated over medium-low heat for the next step.
  4. Assemble Sandwiches: Spread the remaining 2 tablespoons of butter on all slices of bread. Place two slices buttered side down on a cutting board, evenly divide the caramelized onions over them, and sprinkle the shredded cheddar cheese on top. Cover with the remaining bread slices, buttered side up.
  5. Cook Toasties: Place one sandwich in the hot pan and fry each side for 2-3 minutes until the bread is crispy and golden brown and the cheese inside is melted. Repeat for the second sandwich. Serve hot.
