  • 300 g Plain Flour
  • 2.5 tsp Baking Powder

  • 70 g Unsalted Butter (Chilled)
  • 170 ml Milk (Chilled)
  • 3 tsp Marmite
  • 70 g Cheddar Cheese (Grated)

  • Extra Cheese for Topping (Grated)

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (390°F) to ensure it reaches the right temperature for baking the scones evenly.
  2. Sift Dry Ingredients: In a mixing bowl, sift together the plain flour and baking powder to combine and aerate them for lighter scones.
  3. Rub in Butter: Chop the chilled butter into small pieces and add to the flour mixture. Use your fingertips to rub the butter into the flour until the texture resembles fine breadcrumbs, which helps create a flaky texture.
  4. Add Cheese: Stir the grated cheddar cheese into the breadcrumb mixture evenly, distributing the cheese flavour throughout the dough.
  5. Mix Marmite Milk: In a separate bowl, mix the marmite with chilled milk until it dissolves completely. This infuses the liquid with a savory umami flavor.
  6. Combine Mixtures: Pour the marmite milk into the dry ingredients and gently stir until the dough begins to come together. Avoid overmixing to keep the scones tender.
  7. Shape Dough: Turn the dough onto a lightly floured surface and gently flatten it to about 3cm thick, preparing it for cutting.
  8. Cut Scones: Use a biscuit cutter to cut out scone rounds from the dough. Arrange the scones on a baking tray lined with parchment paper. Re-roll and cut remaining dough to minimize waste.
