Ingredients
Chilli-Grapefruit Syrup
- 250 ml (1 cup + 2 tsp) ruby grapefruit juice (approx. from 1 1/2 ruby grapefruits)
- 50 g (1/4 cup) caster or superfine sugar
- 120 ml (1/2 cup) water
- 1 red chilli, sliced in half (choose a chilli with some heat)
- Juice of 1 lime
Charred Grapefruit
- 1 slice ruby grapefruit, cut into quarters
- 1 tbsp light brown sugar
Mocktail Assembly
- 250 ml (1 cup + 2 tsp) fiery ginger beer (such as Old Jamaica)
- 9 slices lime
- 1 cup crushed ice
- 3 Thai chillies for decoration
Instructions
- Make the chilli-grapefruit syrup: Combine the ruby grapefruit juice, caster sugar, water, and sliced red chilli in a small saucepan. Place over high heat and bring the mixture to a boil. Stir well, then reduce the heat and simmer gently for 10 minutes. Turn off the heat and allow the syrup to cool completely. Once cooled, strain out and discard the chilli pieces to leave a spicy, sweet syrup.
- Add lime juice to syrup: Stir the fresh lime juice into the cooled chilli-grapefruit syrup, enhancing the tartness and brightening the flavor.
- Caramelize the grapefruit slices: Sprinkle the ruby grapefruit quarters evenly with light brown sugar. Using a cook’s blowtorch, carefully caramelize and slightly char the sugar on both sides of the grapefruit pieces. Alternatively, you can place them under a very hot grill or on a griddle pan to achieve caramelization and a smoky finish.
- Prepare the glasses: Fill three glasses with crushed ice. Add 3 slices of lime to each glass to infuse a fresh citrus aroma and flavor.
- Assemble the mocktail: Divide the chilli-grapefruit syrup evenly between the prepared glasses over the ice and lime. Top each glass with fiery ginger beer for a spicy fizz.
- Garnish and serve: Make a small slit in each caramelized grapefruit wedge and place it on the rim of each glass. Finish by topping each drink with a whole Thai chilli for an elegant, spicy decoration. Serve immediately and enjoy.
