Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) to prepare for baking the cauliflower.
  2. Prepare Cauliflower Rice: Grate the cauliflower into rice-sized pieces using a food processor or box grater to achieve a fine texture for the crust.
  3. Bake Cauliflower Rice: Spread the riced cauliflower evenly on a parchment-lined baking sheet in a flat layer. Bake at 350°F for 20 minutes until it begins to brown. Remove from oven and let it cool slightly.
  4. Raise Oven Temperature: Increase oven temperature to 425°F (220°C) to finish baking the mini pizzas later.
  5. Squeeze Out Moisture: Place the baked cauliflower rice into a cheesecloth and squeeze out as much moisture as possible to ensure a firm crust.
  6. Make the Crust Mixture: In a large bowl, combine the squeezed cauliflower, eggs, parmesan, mozzarella, salt, oregano, and garlic powder, stirring well to form the crust mixture.
  7. Prepare Muffin Tin: Line a muffin tin with parchment squares or cupcake liners for easy removal and shaping.
