Description
A flavorful and colorful Carrot Rice recipe combining aromatic curry spices, sweet grated carrots, and long grain rice, cooked to perfection in vegetable broth and finished with butter for a creamy texture. This easy stovetop dish is great as a side or a light main.
Ingredients
Vegetables
- 1 small onion, finely chopped
- 2 garlic cloves, grated
- 2½ cups grated carrots (about 250 g / 9 oz)
Spices & Seasonings
- 2 teaspoons curry powder
- Fine sea salt, to taste
- Ground black pepper, to taste
Rice & Broth
- 1½ cups long grain rice (300 g)
- 2½ cups vegetable broth (600 ml)
Oils & Fats
- 1 tablespoon vegetable oil (or olive oil)
- 1 heaped tablespoon butter
Instructions
- Chop onions and garlic: Finely chop 1 small onion and grate 2 garlic cloves. Keep them separate for cooking.
- Sauté onions and spices: Heat 1 tablespoon of vegetable oil in a heavy-bottomed pan over medium heat. Add the chopped onions and cook for about 2 minutes until slightly translucent. Add the grated garlic and 2 teaspoons of curry powder, stirring continuously for 1 minute to release the flavors.
- Add rice and carrots: Stir in 1½ cups of long grain rice and 2½ cups of grated carrots, mixing well for about 1 minute until all ingredients are evenly combined.
- Simmer the rice: Pour in 2½ cups of vegetable broth and stir. Cover the pot and bring to a boil. Once boiling, reduce heat to low and simmer for 10-12 minutes or until the rice is cooked and liquid has been absorbed. Check doneness to ensure rice is tender.
- Add butter and season: Remove from heat and keep covered for 5 minutes. Then carefully stir in 1 heaped tablespoon of butter until melted throughout the rice. Adjust the seasoning with salt and ground black pepper to taste. Fluff the rice gently with a fork before serving.

- Use a heavy-bottomed pan to prevent sticking and ensure even cooking.
- You can substitute vegetable oil with olive oil for a slightly different flavor profile.
