Instructions
- Sauté Aromatics: In a large stockpot, heat the olive oil over medium heat. Add the chopped onion, shallot, and minced garlic. Sauté for 5 to 7 minutes until the onions become translucent and fragrant.
- Add Herbs and Spices: Stir in the fresh thyme, chopped sage leaves, cumin, turmeric, cayenne pepper, and ground black pepper to the sautéed aromatics. Cook briefly, about a minute, to release their flavors.
- Combine Main Ingredients: Add the peeled and chopped carrots, parsnips, and rinsed quinoa into the pot. Pour in the vegetable broth or water and bring the mixture to a boil.
- Simmer the Soup: Once boiling, reduce the heat to low to maintain a gentle simmer. Cook uncovered for 20 to 40 minutes, or until the carrots and parsnips are tender and the quinoa is cooked through.
