Description

  • Fresh tarragon or parsley to garnish
  • Honey (optional, for drizzling)


Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the carrots and baking the pastry.
  2. Prepare Carrots: Line a baking sheet with foil. Scrub and wash the carrots thoroughly, then cut each carrot into quarters lengthwise for even roasting.
  3. Season Carrots: Place the carrot quarters on the foil-lined baking sheet, drizzle with oil, sprinkle with salt and pepper, then toss gently to coat all pieces evenly.
  4. Roast Carrots: Arrange the carrots in a single layer and roast in the oven for 15-20 minutes, or until they are tender and cooked through.
  5. Prepare Puff Pastry: While the carrots roast, line another baking sheet with foil. Unfold the thawed puff pastry into a square shape on this sheet.
  6. Score and Dock Pastry: Using a sharp knife, make a shallow cut about ½ inch inside the edges of the puff pastry square to create a frame, then poke holes in the center portion with a fork to prevent excessive puffing.
  7. Bake Puff Pastry: Place the puff pastry in the oven alongside the carrots and bake for about 12 minutes, until it turns light golden brown.
  8. Prepare Tart Base: Once baked, gently press down the center of the puff pastry if it has puffed up too much. Crumble the goat cheese evenly over the center section of the pastry.
