Description

This elegant Cardamom + Rose Pots De Crème recipe features a fragrant custard infused with crushed cardamom pods and sweet rose syrup. Baked gently in a water bath, these rich and creamy custards are garnished with unsprayed rose petals for a delicate floral finish. Perfect for a sophisticated dessert that combines exotic spices with a hint of romance.

Ingredients

Custard

  • 1 cup heavy cream
  • 1 cup whole milk
  • 12 cardamom pods, crushed
  • 4 egg yolks
  • 1/4 cup sugar
  • 1/4 cup rose syrup
  • 1/2 tsp vanilla extract

Garnish

  • Unsprayed rose petals

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 325°F (160°C). Place four 1/2-cup ramekins into a deep baking dish to prepare for baking the custards in a water bath.
  2. Infuse Cream and Milk: In a small saucepan over medium heat, combine the heavy cream, whole milk, and crushed cardamom pods. Heat until bubbles appear around the rim but do not boil. Remove from heat, cover, and let the mixture steep for 20 minutes to allow the cardamom flavor to infuse fully. Strain out the cardamom pods and set the infused liquid aside.
  3. Whisk Egg Yolks and Sugar: In a medium bowl, whisk together the egg yolks and sugar until the mixture is smooth and slightly pale. This step helps to incorporate air and dissolve the sugar for a creamy texture.
  4. Combine Ingredients: Slowly whisk the warm infused cream mixture into the egg yolk mixture, then add the rose syrup and vanilla extract. Mix thoroughly to combine all flavors evenly without curdling the eggs.
  5. Pour Custard into Ramekins: Divide the custard mixture evenly among the prepared ramekins.
  6. Prepare Water Bath and Bake: Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins. This water bath helps cook the custards gently and evenly. Cover the baking dish with aluminum foil and bake for 45-50 minutes. The custards should be mostly set but still have a gentle wobble in the center when done.
  7. Cool and Chill: Remove the ramekins from the water bath and transfer to a wire rack to cool to room temperature. Once cooled, refrigerate the pots de crème for at least 4 hours or overnight to allow them to set completely and develop their flavors.
  8. Garnish and Serve: Just before serving, garnish each pot de crème with unsprayed rose petals for an elegant and fragrant finish.

Notes

  • Be careful not to overheat the cream mixture to avoid curdling.
  • The water bath ensures gentle cooking and prevents the custard from cracking or overbaking.
  • Use unsprayed rose petals specifically meant for food to avoid exposure to pesticides.
  • Pots de crème can be made a day ahead and refrigerated overnight for convenience.
