Ingredients
Fruits & Vegetables
- ½ of a fresh ripe pineapple
- 1 red bell pepper, diced (seeds removed)
- ¼ cup finely diced red onion
- ¼ cup fresh cilantro, finely chopped
- 1 jalapeño, finely diced (seeds removed)
- 1-2 limes, juiced
Other Ingredients
- 1 tablespoon brown sugar (plus more as needed, for sprinkling)
- Olive oil (for brushing)
- Salt and pepper (to taste)
Instructions
- Slice the pineapple: Slice off the thick skin of the pineapple, then cut into ½-inch thick rings, removing the core. Using a small round cookie cutter or careful knife work, remove the core completely, then dice the pineapple into bite-sized pieces.
- Caramelize pineapple: Brush both sides of the pineapple slices with olive oil, then sprinkle with brown sugar evenly. Heat a large skillet or grill pan over medium-high to high heat. Sear the pineapple slices undisturbed on each side until they develop a nice caramelized char, about 2-3 minutes per side. Be careful not to overcook to preserve the pineapple’s juicy center. Remove from heat and dice the caramelized pineapple slices.
- Combine ingredients: In a serving bowl, mix together the diced caramelized pineapple, red bell pepper, red onion, fresh cilantro, and jalapeño.
- Season and finish: Squeeze the juice of 1-2 limes over the mixture, adjusting to your taste preference. Toss well to combine all flavors evenly. Season with salt and pepper to taste.
- Serve: The pineapple salsa can be served warm immediately or chilled and served cold. Enjoy as a fresh topping or delicious side.
Notes
- Use fresh ripe pineapple for the best flavor and sweetness.
- Adjust the amount of jalapeño according to your desired spice level.
- Grilling the pineapple slices is an alternative to skillet caramelization for added smoky flavor.
- This salsa pairs wonderfully with grilled chicken, fish, tacos, or tortilla chips.
- Store leftovers in an airtight container in the refrigerator for up to 2 days for optimal freshness.
