Ingredients
Vegetables and Aromatics
- 3 tablespoons unsalted butter (vegan butter if needed)
- 1/2 medium green cabbage, thinly sliced and lightly chopped (about 6 cups)
- 1 medium shallot, diced
- 4 large cloves garlic, minced
- ½ teaspoon kosher salt (plus more for pasta water)
- ½ lemon, zested and juiced
- 1 small bunch fresh chives (or another fresh herb of choice) for garnish
Pasta and Protein
- 8 ounces dried rigatoni, penne, or spaghetti (gluten-free if needed)
- 1 can white beans (such as cannellini or great northern beans), drained and rinsed
Finishing Touches
- Parmesan cheese for serving (vegan cheese if needed)
- Toasted walnuts, about 1/4 cup lightly crushed (optional)
Instructions
- Caramelize the Cabbage: Melt 2 tablespoons of the butter in a large, high-sided sauté pan or pot over medium-low heat. Add the thinly sliced cabbage and diced shallot. Sprinkle with kosher salt and cook slowly, stirring occasionally, for 20 to 30 minutes until the cabbage softens significantly and caramelizes to a golden-brown color, similar to caramelized onions.
- Add Garlic: Stir in the minced garlic and cook for 1 to 2 minutes until fragrant, being careful not to burn it.
- Cook the Pasta: While the cabbage caramelizes, bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve a few tablespoons of pasta water before draining.
- Combine Pasta and Cabbage Mixture: Add the cooked pasta to the cabbage mixture along with the remaining 1 tablespoon of butter, drained and rinsed white beans, and a few tablespoons of reserved pasta water. Toss everything together well. Season with salt and freshly ground pepper to taste.
- Add Lemon and Herbs: Mix in the lemon zest and juice, along with half of the chopped fresh chives and a generous shaving of Parmesan cheese. Toss everything again to combine the fresh, bright flavors with the savory elements.
- Serve and Garnish: Plate the pasta and garnish with the remaining chives, additional Parmesan cheese, and toasted walnuts for crunch if using. Serve immediately and enjoy a warm, flavorful meal.
- Storage: Transfer any leftovers to an airtight container and refrigerate for 3 to 5 days. When reheating, add a splash of water to help rehydrate the pasta and cabbage.
