Ingredients

Egg Mixture

  • 8 large eggs (or more, see notes)
  • 1 cup milk
  • 1 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Main Ingredients

  • 2 cups shredded mozzarella cheese (divided into 1 1/2 cups and 1/2 cup)
  • 1 pint cherry tomatoes (or grape or roma, halved or chopped)
  • 30 ounces shredded hashbrowns (approximately; can substitute cubed potatoes or tater tots)

Garnish

  • Fresh basil for garnish


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it's ready for baking the casserole evenly.
  2. Mix Egg Base: In a large bowl, beat together the eggs, milk, dried basil, garlic powder, salt, and black pepper until well combined and slightly frothy.
  3. Combine Ingredients: Add the halved cherry tomatoes, 1 1/2 cups of the shredded mozzarella cheese, and the shredded hashbrowns to the egg mixture. Stir gently to evenly distribute all ingredients.
  4. Prepare Baking Dish: Pour the entire mixture into a 9x12 inch baking dish, spreading it out evenly for uniform cooking.
  5. Add Cheese Topping: Sprinkle the remaining 1/2 cup of shredded mozzarella cheese evenly over the top of the casserole.
