Description

This delightful Cannoli Pie combines the classic flavors of cannoli into an easy-to-make pie form. With a crispy waffle cone crust and a creamy ricotta and mascarpone filling studded with mini chocolate chips, it’s a refreshing no-bake dessert perfect for any occasion. The hints of orange zest and cinnamon add a subtle warmth, complemented by optional garnishes like whipped cream, pistachios, and maraschino cherries for a visually appealing and delicious treat.

Ingredients

Crust

  • 1 ½ Cups Waffle Cone Crumbs (About 10 Waffle Cones)
  • 1 Tablespoon White Sugar
  • 6 Tablespoons Butter (Melted)

Filling

  • 1 ½ Cups Ricotta Cheese (Strained)
  • 8 Ounces Mascarpone Cheese
  • 1 Cup Powdered Sugar
  • 1 ½ Teaspoons Vanilla Extract
  • 1 Teaspoon Orange Zest
  • ¼ Teaspoon Ground Cinnamon
  • 1 Cup Mini Chocolate Chips

Optional Garnishes

  • Whipped Cream
  • Chopped Pistachios
  • Maraschino Cherries

Instructions

  1. Preheat and Prepare Crust: Preheat your oven to 350 degrees Fahrenheit and lightly spray a 9-inch pie pan with nonstick cooking spray to prevent sticking.
  2. Make the Crust: In a medium bowl, mix together the waffle cone crumbs, white sugar, and melted butter until fully combined. Press this mixture firmly and evenly into the bottom and up the sides of the prepared pie pan to form the crust.
  3. Bake the Crust: Place the pie pan in the oven and bake the crust for 8 to 10 minutes, or until set and lightly golden. Remove from oven and allow to cool slightly.
  4. Prepare Filling: In a large mixing bowl, combine the strained ricotta cheese, mascarpone cheese, powdered sugar, vanilla extract, orange zest, and ground cinnamon. Gently fold in the mini chocolate chips until evenly distributed.
  5. Assemble the Pie: Spread the prepared filling evenly over the cooled pie crust, smoothing out the top with a spatula.
  6. Chill: Refrigerate the pie for 4 to 6 hours to allow the filling to set and flavors to meld beautifully.
  7. Serve and Garnish: Before serving, garnish the pie as desired with whipped cream, chopped pistachios, and maraschino cherries for an extra layer of flavor and visual appeal.

Notes

  • Straining the ricotta cheese helps remove excess moisture, ensuring a thicker, creamier filling.
  • Waffle cone crumbs give a sweet, crunchy alternative to traditional graham cracker crusts, adding a unique flavor.
  • If you prefer, substitute pistachios with any other nuts like almonds or walnuts.
  • This pie can be made a day in advance and kept refrigerated, making it perfect for entertaining.
  • To reduce sweetness, adjust powdered sugar amount to taste.
