Ingredients
Rice and Seasoning
- 2 cups Calrose rice (Japanese short or medium grain rice)
- 2 cups cold water
- 5 Tbsp sushi vinegar (seasoned rice vinegar)
Toppings
- 8 oz flake-style imitation crab meat (chopped)
- 1 sheet of nori seaweed (chopped)
- 1 large avocado (diced)
- 1/2 English cucumber (sliced)
- 1 jalapeño (finely diced, optional)
- 1/4 cup chives (finely chopped, optional)
Condiments and Garnishes
- Soy sauce (regular or low sodium, to taste)
- Wasabi paste (to taste)
- Spicy mayo (1/4 cup mayonnaise mixed with 1 Tbsp sriracha sauce)
- Pickled sushi ginger (optional, for serving)
- Toasted sesame seeds (white or black, for garnish)
Instructions
- Rinse the Rice: Place the Calrose rice in a colander and rinse thoroughly with cold water until the water runs clear to remove excess starch. Drain well.
- Cook the Rice: Transfer the drained rice to a large, heavy saucepan and add 2 cups of cold water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to the lowest simmer, cover the pan, and cook until the water is fully absorbed, about 15 minutes. Remove from heat and let the rice rest, covered, for an additional 15 minutes.
- Season the Rice: Transfer the cooked rice to a large bowl and gently break up any clumps while it is still warm. Drizzle 5 tablespoons of sushi vinegar over the rice. Using a rice paddle or spatula, slice and fold the vinegar into the rice until evenly mixed. Cover the rice with a damp kitchen towel and allow it to cool to room temperature as you prepare the toppings.
- Assemble the Bowls: Divide the cooled sushi rice evenly between 4 to 5 bowls. Top each bowl with chopped imitation crab, sliced cucumber, diced avocado, chopped nori, diced jalapeño (if using), and chopped chives (if using).
- Add Sauces and Garnishes: Prepare the spicy mayo by mixing 1/4 cup mayonnaise with 1 tablespoon sriracha sauce. Drizzle the spicy mayo over each bowl. Then, drizzle soy sauce according to taste and sprinkle with toasted sesame seeds for added flavor and crunch.
- Serve: Serve the California Roll Bowls with sides of pickled sushi ginger and wasabi paste. Pass additional soy sauce at the table for extra seasoning if desired. Enjoy immediately.
Notes
- Rinsing the rice thoroughly is crucial to ensure the sushi rice has the correct sticky yet separated texture.
- The sushi vinegar is seasoned rice vinegar and can be bought pre-made or homemade by mixing rice vinegar with sugar and salt.
- Jalapeño and chives are optional but add a nice fresh kick to the bowls.
- Spicy mayo can be adjusted for heat by varying the amount of sriracha sauce.
- Make sure to cool the rice to room temperature before assembling to prevent sogginess of toppings.
- Use imitation crab meat for convenience, but real crab can be substituted if preferred.
