Ingredients
Butter & Seasonings
- 1/4 cup salted butter (melted)
- 1 teaspoon salt
- 1 teaspoon cayenne powder (optional)
- 2 tablespoons Cajun seasoning
- 1 tablespoon sweet paprika
- 3 cloves garlic (minced)
- 4 tablespoons butter (divided)
Produce & Seafood
- 2 pounds large shrimp (thawed with tail on)
- 2 pounds asparagus (woody ends removed)
- fresh chopped parsley (for serving)
- lemon wedges (for serving)
Instructions
- Prepare Cajun Butter Mixture: In a large bowl, whisk together the melted butter, salt, cayenne powder (if using), Cajun seasoning, sweet paprika, and minced garlic until well combined.
- Season the Shrimp: Add the shrimp to the bowl with the butter mixture and toss thoroughly to coat each shrimp with the flavorful seasoning. Set aside to marinate briefly.
- Assemble Foil Packets: Cut eight large pieces of heavy-duty foil and stack two at a time to create double layers. Place one-fourth of the seasoned shrimp in the center of the foil. Arrange asparagus alongside the shrimp lengthwise, then place 1 tablespoon of butter on top of the asparagus. Sprinkle lightly with salt and pepper.
- Seal the Packets: Fold up and around the shrimp and asparagus with the foil edges to create a closed packet. Avoid wrapping too tightly to allow steam circulation inside the packet.
- Cook on the Grill: Preheat the grill to medium-high heat. Place the foil packets seam-side up on the grill grates. Cook for about 8 minutes, until shrimp turn bright pink and are cooked through.
- Or Bake in the Oven: Preheat the oven to 400°F (200°C). Place the foil packets on a baking sheet and bake for 10-15 minutes, until shrimp are pink and cooked thoroughly.
- Serve and Garnish: Carefully open the foil packets, then garnish the shrimp and asparagus with freshly chopped parsley and lemon wedges. Serve immediately and enjoy the vibrant flavors.
Notes
- For spicier flavor, increase the cayenne powder to taste or add a dash of hot sauce.
- Use heavy-duty foil to prevent tearing and avoid leaks during cooking.
- These packets can also be cooked on a stovetop grill pan if an outdoor grill is not available.
- Ensure shrimp are fully thawed before cooking to ensure even cooking.
- Leftovers can be refrigerated in an airtight container for up to 2 days.
