Instructions
- Cook the Pasta and Vegetables: Bring a large pot of water to a rolling boil and generously season it with kosher salt. Add the spaghetti or linguine and cook until slightly underdone—about 2 minutes less than the package instructions. In the last minute, add the asparagus pieces and peas to blanch them briefly together with the pasta. Drain pasta and vegetables while reserving ½ cup of the cooking water.
- Start the Sauce: In a large 12-inch skillet, melt 1 tablespoon of unsalted butter over medium heat. Add the coarsely ground black pepper and cook for about 1 minute, stirring constantly, until fragrant. Pour in ¼ cup of the reserved pasta water along with the remaining tablespoon of butter. Stir continuously until the butter melts and the liquid begins to slightly thicken, about 30 seconds.
- Combine Pasta, Veggies, and Sauce: Add the drained pasta, asparagus, peas, and all three cheeses (young pecorino, Pecorino Romano, and Parmesan) to the skillet. Toss thoroughly to melt the cheeses, coating the pasta with a creamy, peppery sauce. Cook for another minute, adding more reserved pasta water gradually if the sauce feels too dry. Season with coarse sea salt to taste.
- Serve: Plate the pasta immediately, topping each serving with a drizzle of extra-virgin olive oil, additional grated cheese, and snipped fresh chives for a fresh, aromatic garnish. Serve warm for best flavor.
