Ingredients

Panna Cotta Base

  • 1 1/2 tablespoons cold water
  • 3/4 teaspoon unflavored gelatin
  • 1 cup heavy cream (divided)
  • 1/4 cup sugar
  • 3/4 cup low-fat buttermilk
  • 1/2 teaspoon vanilla extract
  • 1/2 vanilla bean (seeds scraped)

Brûléed Nectarines

  • 1 nectarine (thinly sliced)
  • 1-2 tablespoons brown sugar

Instructions

  1. Soften Gelatin: Place cold water in a small bowl, sprinkle gelatin over the top, and let it sit for about 10 minutes to soften.
  2. Dissolve Gelatin in Cream and Sugar: In a small saucepan over medium heat, combine 1/2 cup heavy cream and sugar. Whisk until the sugar dissolves. Remove from heat, then stir in the softened gelatin until completely dissolved.
  3. Combine Ingredients: In a separate bowl, mix the remaining 1/2 cup heavy cream, buttermilk, vanilla extract, and scraped vanilla seeds. Gradually stir in the hot cream and gelatin mixture to combine thoroughly.
  4. Chill to Set: Divide the mixture evenly into 4 ramekins and refrigerate overnight or until the panna cotta is firm and set.
  5. Brûlée Nectarines: Just before serving, arrange the nectarine slices on a foil-lined baking sheet. Sprinkle brown sugar evenly over the slices. Using a kitchen torch, heat the sugar on top of the fruit until it caramelizes and hardens, forming a crispy brûléed layer.
  6. Serve: Place the brûléed nectarine slices on top of each panna cotta. Serve chilled and enjoy the creamy texture complemented by the crisp caramelized fruit.

Notes

  • For best results, use fresh ripe nectarines for a sweeter caramelized topping.
  • If you don’t have a kitchen torch, the nectarine slices can be caramelized under a hot broiler for a few minutes, watching carefully to avoid burning.
