Banana Loaf
- 1/2 cup unsalted butter
- 3/4 cup (75g) finely chopped pecans
- 1 1/2 cups mashed bananas (from 3 large or 4 small very ripe bananas)
- 1 cup (200g) white granulated sugar
- 3 tablespoons (37g) neutral oil
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon Diamond Crystal kosher salt
- 1 3/4 cups (195g) all-purpose flour
Frosting
- 3 tablespoons unsalted butter (at room temperature)
- 3 ounces cream cheese (at room temperature)
- 1 cup powdered sugar
- Pinch kosher salt
- 1 tablespoon heavy cream
- 1 teaspoon vanilla extract
Instructions
- Prepare Butter Pecan Mixture: In a small saucepan over low heat, melt 1/2 cup unsalted butter. Stir in the chopped pecans and raise heat to medium. Cook for 2 minutes, stirring frequently and scraping the pan bottom to prevent burning, until the mixture is fragrant and bubbly. Remove from heat and transfer to a large bowl. Let cool for 15 minutes.
- Preheat Oven and Prepare Pan: Preheat oven to 350ºF (175ºC). Grease and line an 8x4-inch or 9x5-inch loaf pan with parchment paper extending over the edges for easy removal of the loaf.
- Mash Bananas: While the butter pecan mixture cools, mash the ripe bananas until smooth and set aside.
- Mix Wet Ingredients: To the cooled butter pecan mixture, add mashed bananas, sugar, neutral oil, and vanilla extract. Whisk to combine thoroughly.
- Add Eggs and Leavening: Add the eggs to the mixture and whisk until fully incorporated. Then whisk in baking powder, baking soda, and kosher salt.
- Add Flour: Gently fold in the all-purpose flour using a large silicone spatula, mixing just until the batter comes together. Avoid over-mixing to keep the bread tender.
- Bake: Pour the batter into the prepared loaf pan. Bake for 55-65 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Cool: Let the loaf cool for 10 minutes in the pan. Then, use the parchment paper lifts to remove the loaf and transfer it to a cooling rack to cool completely.
- Make Frosting: In a medium bowl, beat cream cheese with an electric hand mixer until smooth. Add room temperature butter and beat until creamy, about 15 seconds. Add powdered sugar, pinch of kosher salt, vanilla extract, and heavy cream. Beat for 2 minutes until the frosting is fluffy and smooth.
- Assemble: Once the banana bread is completely cooled, spread or dollop the cream cheese frosting over the top. Use the back of a spoon to swirl evenly.
- Serve and Store: Slice the frosted loaf and serve. Wrap any leftovers tightly with plastic wrap and store at room temperature for up to 3 days.
