Description
Bubble and Squeak is a traditional British dish made from leftover vegetables, primarily potatoes and cabbage, mashed together and cooked until golden and crispy. This comforting and speedy recipe is perfect for using up leftovers or making fresh with simple ingredients.
Ingredients
Vegetables
- 1 kg Potatoes (Peeled and cut into 4cm cubes)
- 1/2 Savoy cabbage (Thinly sliced)
- 400 g Carrots (Peeled and sliced)
Other Ingredients
- 50 g Butter
- Salt and pepper to taste
- 1 tbsp Sunflower oil
- 50 g Cheese (grated)
Instructions
- Cook vegetables: Put a large saucepan of salted water on to boil and cook the potatoes for 10 minutes. Then add the carrots and cabbage and cook for a further 5 minutes until all are tender when pierced with a knife.
- Drain and dry: Drain the vegetables well and return them to the saucepan. Place the pan back on the hob with no water for 1 minute to evaporate excess moisture, preventing a watery mash.
- Mash the mixture: Mash the potatoes, cabbage, and carrots together thoroughly with butter, salt, and pepper until smooth and evenly combined.
- Prepare the dish: Grease a grill-proof dish or tin with sunflower oil and transfer the mashed mixture into it, smoothing the surface. Sprinkle the grated cheese evenly over the top.
- Grill until golden: Place the dish under a preheated medium grill and cook for 3-5 minutes until the cheese melts and turns golden brown and crispy.
- Alternative oven method: If using leftover cooked vegetables, mash them with butter, salt, and pepper, sprinkle with cheese, then bake in a preheated oven at 200°C (400°F) for about 30 minutes until heated through and golden on top.
Notes
- Use leftover cooked vegetables to save time and add extra flavor.
- Savoy cabbage adds a nice texture and mild flavor, but you can substitute with green cabbage if needed.
- Adjust the seasoning with salt and pepper to your preference.
- Cheese topping can be varied: cheddar, stilton, or even a sprinkling of parmesan works well.
- For a vegetarian version, ensure the cheese is vegetarian-friendly.
