Description

A flavorful and easy-to-make Bruschetta Chicken recipe featuring juicy baked chicken breasts topped with a fresh tomato, basil, and garlic mixture, melted mozzarella cheese, and a finishing touch of balsamic glaze. Perfect for a healthy and satisfying weeknight dinner.

Ingredients

Chicken

  • 3-4 chicken breasts (about 2 lbs)
  • 1/2 tsp salt, divided
  • 1/2 tsp black pepper, divided
  • 4 oz shredded mozzarella cheese (about 1 cup)

Bruschetta Topping

  • 6 roma tomatoes, chopped into 1/4" pieces
  • 1/2 cup fresh chopped basil, divided
  • 2 cloves fresh chopped garlic
  • 2 tbsp balsamic vinegar

Garnish

  • Fresh chopped basil
  • Balsamic glaze

Instructions

  1. Preheat the oven: Set your oven to 375˚F (190˚C) to prepare for baking the chicken.
  2. Prepare the tomato mixture: In a large bowl, combine chopped roma tomatoes, half of the fresh chopped basil, chopped garlic, balsamic vinegar, and half of the salt and pepper. Toss gently to mix the flavors.
  3. Season and assemble the chicken: Lay the chicken breasts flat in a large baking dish. Season them evenly with the remaining salt and pepper. Pour the tomato mixture evenly over the chicken breasts and spread it using a spatula. Top each breast with shredded mozzarella cheese.
  4. Bake the chicken: Place the baking dish on the middle rack of the oven and bake for 35-45 minutes, or until the chicken reaches an internal temperature of 165˚F (74˚C) ensuring it is fully cooked and juicy.
  5. Garnish and serve: Once baked, remove from oven, sprinkle with fresh chopped basil, and drizzle balsamic glaze on top. Serve hot and enjoy your delicious Bruschetta Chicken!

Notes

  • You can use a meat thermometer to ensure the chicken is cooked safely to 165˚F.
  • For added flavor, let the chicken marinate in the tomato mixture for 15-30 minutes before baking.
  • Balsamic glaze can be homemade by reducing balsamic vinegar or store-bought for convenience.
  • Serve with a side of steamed vegetables or a fresh green salad for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
