A quick and nutritious Breakfast Vegetable Scramble featuring sautéed colorful vegetables, fresh herbs, and fluffy eggs or tofu, perfect for a wholesome morning meal.
Ingredients
Vegetables
- 1/2 red onion, thinly sliced
- 1 red bell pepper (or 1/2 red and 1/2 orange), large diced
- 4 cups baby kale or spinach
- 1 tablespoon chopped chives or other fresh herbs
Egg Mixture
- 4 eggs
- ¼ cup shredded Colby cheese or crumbled goat cheese (optional)
- ¼ teaspoon kosher salt
- Fresh ground black pepper, to taste
Other
- 2 tablespoons olive oil
- Avocado slices, for serving
Instructions
- Prep the vegetables: Thinly slice the red onion and large dice the red bell pepper (or half red and half orange for more color).
- Prep the eggs or tofu: In a medium bowl, crack the eggs and whisk until well beaten. Stir in shredded cheese, chopped fresh herbs, kosher salt, and fresh ground pepper. (Alternatively, prepare tofu scramble as per tofu instructions.)
- Cook the vegetables: Heat olive oil in a large skillet over medium-high heat. When hot, add onion and bell peppers. Cook for 3 to 4 minutes until tender and starting to brown, stirring occasionally. Reduce heat to low, add a pinch of salt and the baby greens. Cook for 30 seconds until wilted. Remove vegetables from the pan and set aside.
- Cook the eggs or tofu: Keeping heat on low, pour in the beaten eggs. Cook for 20 to 30 seconds until eggs begin to set. Use a flat spatula to gently scrape and stir the eggs constantly until cooked but still soft, about 1 minute. (For tofu, follow tofu scramble instructions.)
- Add the vegetables and serve: Return the cooked vegetables to the pan with the eggs. Stir gently until combined and warmed through. Serve immediately with avocado slices on the side.
