- 1 pound ground chicken or pork
- 1/2 sweet onion, chopped
- 2 cloves garlic, minced or grated
Seasonings and Sauce
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1 teaspoon kosher salt
- 2 chipotle peppers in adobo, chopped
- 1/2 cup not-from-concentrate Florida's Natural® Brand Orange Juice
- 1/4 cup water
Fruit and Herbs
- 2 cups fresh pineapple chunks (divided: 1 cup for cooking, 1 cup for salsa)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh basil, chopped
- 1 jalapeño, seeded and chopped
- Juice of 1 lime
Serving Components
- 6-8 corn or flour tortillas, warmed
- 4-6 fried eggs
- Sliced avocado, for serving
- Feta or cheddar cheese, for serving
Instructions
- Cook the Meat and Aromatics: In a large skillet, heat the olive oil over high heat until shimmering. Add the ground chicken and chopped onion. Cook while stirring frequently and breaking up the meat until the chicken is browned and cooked through, about 5 minutes.
- Add Spices and Simmer: Stir in the minced garlic, chili powder, paprika, kosher salt, and chopped chipotle peppers in adobo. Pour in the orange juice, 1/4 cup water, and 1 cup of fresh pineapple chunks. Reduce the heat to medium and let the mixture simmer gently, stirring occasionally, until the sauce thickens slightly and coats the chicken, approximately 10 to 15 minutes.
- Finish Meat Mixture: Remove the skillet from heat and stir in the chopped cilantro for a fresh herbaceous note.
- Prepare Pineapple-Basil Salsa: While the meat simmers, combine the remaining 1 cup pineapple chunks with the chopped basil, seeded and chopped jalapeño, lime juice, and a pinch of salt in a bowl. Mix well to create a bright and spicy salsa.
- Assemble the Tacos: Warm your tortillas and place a fried egg inside each. Top each with a generous portion of the al pastor meat mixture, followed by spoonfuls of the pineapple-basil salsa. Garnish with sliced avocado and a sprinkle of feta or cheddar cheese.
- Serve and Enjoy: Serve the tacos immediately, enjoying the lively combination of sweet, smoky, spicy, and creamy flavors in every bite.
Notes
- Ground chicken can be substituted with ground pork for a richer flavor.
- For spicier tacos, include the jalapeño seeds or add extra chipotle peppers.
- Warm tortillas before serving to make them more pliable and flavorful.
- Fried eggs can be cooked to your preference – sunny side up or over-easy both work well.
- Leftover meat mixture can be stored in the refrigerator for up to 3 days and reheated gently.
