Brabant Potatoes are a deliciously golden and flavorful side dish made with tender boiled potatoes that are lightly roasted and then tossed in a rich garlic butter and olive oil sauce, garnished with fresh parsley. Perfect for complementing any meal with a crispy exterior and soft interior.
Ingredients
Potatoes
- 2 lbs gold potatoes, cut into 1/2-inch cubes
- 2 tsp salt (for boiling and seasoning)
- 1/2 tsp black pepper
Garlic Butter Sauce
- 3 tbsp olive oil
- 4 tbsp butter
- 4-5 tsp garlic, minced
- 3 tbsp fresh parsley, chopped
Instructions
- Prepare the Potatoes: Wash the gold potatoes thoroughly and cut them into 1/2-inch cubes. You may peel them if you prefer, but it is optional.
- Parboil the Potatoes: Fill a pot with 3-4 cups of water and season it with 2 teaspoons of salt. Bring the water to a boil over medium-high heat. Add the potato cubes and boil them for about 5 minutes, or until they soften slightly but are not fully cooked.
- Bake the Potatoes: Drain the potatoes and transfer them to a baking dish. Place the dish in a preheated oven set to 400°F (200°C) and roast the potatoes for 8 to 10 minutes, or until the cubes develop a golden color on the outside.
- Make Garlic Butter Sauce: While the potatoes are roasting, melt 4 tablespoons of butter in a saucepan over medium heat. Add the minced garlic and cook gently for a few minutes until fragrant. Then add 3 tablespoons of olive oil and reduce the heat to low, allowing the mixture to blend without burning the garlic.
- Toss and Serve: Add the roasted potatoes to the garlic butter sauce in the saucepan. Toss them well to coat evenly, and season with additional salt and 1/2 teaspoon black pepper to taste. Sprinkle chopped fresh parsley over the potatoes and serve immediately while hot.
Notes
- You can peel the potatoes if preferred, but leaving the skin on adds extra texture and nutrients.
- Be careful not to overboil the potatoes — they should still hold their shape for roasting.
- Freshly minced garlic will provide the best flavor, but garlic powder can be substituted if needed.
- This dish pairs wonderfully with grilled meats or roasted vegetables.
- For a dairy-free option, substitute butter with vegan margarine or additional olive oil.
