The ingredients are roasted to perfection in the oven, then tossed with freshly cooked pasta and basil to create a luscious, comforting dish that comes together in just 40 minutes.
Ingredients
Vegetables
- 1 pint cherry or grape tomatoes
- 1 medium red onion, roughly chopped
- 5-7 cloves garlic
- 3-4 leaves fresh basil, torn (optional)
Dairy
- 1 package Boursin cheese (any variety - cracked pepper recommended)
Pantry
- ½ tsp red pepper flakes
- 4 tbsp extra virgin olive oil
- Salt and pepper to taste
- 8 ounces dry pasta
Instructions
- Preheat oven: Preheat your oven to 425°F (220°C) to prepare for roasting the vegetables and cheese.
- Prepare vegetables: Spread the cherry tomatoes, roughly chopped red onion, and whole garlic cloves evenly in a medium baking dish.
- Add Boursin cheese: Unwrap the Boursin cheese and place it in the center of the dish, surrounded by the vegetables.
- Season and oil: Drizzle the entire dish liberally with extra virgin olive oil, sprinkle with red pepper flakes, and add salt and pepper to taste.
- Bake: Place the baking dish into the preheated oven and roast for 30-35 minutes, until the tomatoes burst and the cheese is softened and creamy.
- Cook pasta: While the baking dish is in the oven, cook your dry pasta according to the package directions. Reserve ½ cup of the pasta cooking water before draining.
- Toss roasted ingredients: Once removed from the oven, immediately add torn basil leaves if using. Use a wooden spoon or spatula to stir and mash the roasted tomato mixture, mixing the softened cheese and olive oil evenly with the vegetables. Add reserved pasta water as needed to achieve a creamy sauce consistency.
- Combine and serve: Stir the cooked pasta into the creamy roasted vegetable and cheese mixture until well coated. Serve immediately while warm.
Notes
- If you prefer a milder spice, reduce or omit the red pepper flakes.
- Adding fresh basil at the end brightens the dish with herbal notes but can be omitted if unavailable.
- Reserve some pasta water to loosen the sauce and help it cling to the noodles perfectly.
- Any variety of Boursin cheese works; cracked pepper adds a nice hint of spice.
- This dish pairs well with a green salad or garlic bread for a complete meal.
