Description

A quick and easy homemade blueberry syrup made by simmering fresh blueberries with juice, sugar, and cornstarch, resulting in a thick, flavorful topping perfect for pancakes, waffles, or desserts.

  • 2 cups (10 oz) fresh blueberries
  • 1 cup + 2 Tbsp blueberry juice (or grape juice or apple juice, divided)
  • 1/3 cup granulated sugar
  • 4 tsp cornstarch
  • 1 Tbsp lemon juice


Instructions

  1. Combine Ingredients: Add the blueberries, 1 cup of juice, and granulated sugar to a small saucepan. Stir to combine all the ingredients evenly.
  2. Simmer Blueberries: Place the saucepan over medium-high heat and bring the mixture to a simmer. Reduce the heat to low and let it simmer gently for 6 to 10 minutes, stirring occasionally, until many of the blueberries burst and release their juice.
  3. Thicken Syrup: In a small bowl, whisk together the remaining 2 tablespoons of juice with the cornstarch until smooth. Pour this mixture into the saucepan and continue to simmer for 1 more minute, stirring constantly to ensure the syrup thickens evenly without lumps.
  4. Finish with Lemon Juice: Remove the saucepan from heat and stir in 1 tablespoon of lemon juice to brighten the flavor and balance the sweetness.
  5. Optional Strain or Blend: For a smoother syrup, press and strain the mixture through a mesh sieve to remove skins, or carefully blend the hot syrup in a blender (removing the lid’s center insert and covering with a towel for safety). You can also serve the syrup chunky as is.

  • You can substitute blueberry juice with grape or apple juice if blueberry juice is unavailable.
