Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by either spraying with cooking spray or lining with muffin liners to prevent sticking.
- Mix Wet Ingredients: In a large mixing bowl, mash the very ripe bananas thoroughly. Add the melted coconut oil (or olive oil), egg whites, coconut sugar, and vanilla extract. Mix well until evenly combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the almond flour, sorghum flour, gluten free rolled oats, baking soda, ground flaxseed, cinnamon, and salt to ensure even distribution of ingredients.
- Fold Dry into Wet: Gradually fold the dry ingredients into the wet banana mixture, stirring gently until just combined. Avoid overmixing to keep muffins tender.
- Add Blueberries and Hemp Seeds: Carefully fold in the fresh blueberries and hemp seeds to evenly distribute them throughout the batter.
