Ingredients
Muffin Batter
- 3/4 cup granulated sugar
- 1/2 cup 2% milk
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups fresh blueberries
Crumble Topping
- 1/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 2 tablespoons salted butter, softened
Instructions
- Preheat and Prepare Muffin Liners: Preheat your oven to 425°F (220°C). Line 12 muffin cups with paper liners to prevent sticking and ensure easy removal.
- Mix Wet Ingredients: In a medium bowl, whisk together 3/4 cup granulated sugar, 1/2 cup 2% milk, 1/2 cup vegetable oil, 1 large egg, and 1 teaspoon vanilla extract until smooth and well combined.
- Combine Dry Ingredients: In a separate bowl, mix 2 cups all-purpose flour, 2 teaspoons baking powder, and 1/4 teaspoon salt to evenly distribute the leavening agent and salt.
- Make the Batter: Gradually add the dry ingredients to the wet ingredients. Fold gently until just combined to avoid overmixing, which can make the muffins tough. Then gently fold in 2 cups fresh blueberries, being careful not to crush them.
- Fill Muffin Cups: Spoon the batter into the paper-lined muffin cups, filling each about two-thirds full to allow room for rising.
- Prepare Crumble Topping: In a small bowl, use a fork to combine 1/4 cup granulated sugar, 1/4 cup all-purpose flour, and 2 tablespoons softened salted butter until the mixture forms crumbly pieces. Sprinkle this crumble evenly over each muffin batter-filled cup.
- Bake Muffins: Place the muffin tray in the oven and bake at 425°F for 5 minutes. Without opening the oven door, reduce the temperature to 350°F and continue baking for an additional 16-18 minutes. Check for doneness by inserting a toothpick into the center of a muffin; it should come out clean.
- Cool Muffins: Once baked, remove from the oven and allow the muffins to cool completely on a wire rack for optimal texture before serving.
Notes
- Do not overmix the batter to keep muffins tender.
- Use fresh blueberries for best flavor; frozen can be used but may require slight adjustment in baking time.
- Make sure the oven temperature is properly reduced after the initial 5 minutes for even baking.
- Allow muffins to cool completely to let the crumble topping set and prevent sogginess.
