Salad Ingredients

  • 3/4 cup fine bulgur wheat
  • 1 1/2 cups fresh blueberries
  • 1 1/2 cups diced English cucumber
  • 1/2 cup chopped pistachios
  • 1 3/4 cups fresh sweet corn kernels
  • 1 medium avocado, diced
  • 1/2 cup diced red onion (optional)
  • 1/2 cup goat cheese or feta (optional)
  • 1 (0.75-ounce) packet fresh basil, divided (about 3/4 cup packed)

Dressing Ingredients

  • 1/3 cup olive oil
  • 2 lemons (zest and juice yields 1 tsp zest and 1/3 cup juice)
  • 1 tablespoon honey
  • 2 teaspoons Dijon-style mustard
  • 1 1/2 teaspoons minced garlic
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper


Instructions

  1. Prepare Bulgur: Bring 1 1/4 cups of water to a boil. In a large bowl, combine fine bulgur wheat with 3/4 teaspoon salt. Pour the boiling water over the bulgur, stir briefly, then cover tightly with plastic wrap or a lid. Let it soak at room temperature for 15–25 minutes until all the water is absorbed. Fluff the bulgur with a fork and let it cool completely. For faster prep, refrigerate or make a day ahead.
  2. Make Dressing: Zest the lemons to collect 1 teaspoon of zest, then juice lemons to get 1/3 cup lemon juice. In a small blender or food processor, add 1/4 cup packed fresh basil leaves along with olive oil, lemon zest, lemon juice, honey, Dijon mustard, minced garlic, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Blend until smooth. Transfer the dressing to a sealed jar and refrigerate until needed.
  3. Combine Salad Ingredients: To the cooled bulgur wheat, add fresh blueberries, diced cucumber, chopped pistachios, fresh corn kernels, diced avocado, and optional diced red onion. Chop the remaining basil (about 1/2 cup) coarsely and add it to the bowl.
  4. Dress the Salad: Drizzle half of the prepared lemon-basil dressing over the salad ingredients and gently toss to combine. Add remaining dressing gradually, tossing gently as the bulgur soaks up the flavors. If time allows, chill the salad for 15–20 minutes to meld flavors, then toss again before serving.
  5. Serve: If desired, crumble goat cheese or feta on top just before serving. Adjust seasoning with more lemon or salt as needed. Enjoy the salad best on the same day it’s made for optimum freshness and flavor.

  • Fine bulgur wheat can be substituted with quick-cooking bulgur for faster soak times, but adjust water accordingly.
