Ingredients
Salad Ingredients
- 2 cups cherry tomatoes
- 1 cup fresh blueberries
- 10-12 slices fresh mozzarella
- Fresh basil (to taste)
Dressing Ingredients
- 1 tablespoon honey
- 3 tablespoons olive oil
- Salt and black pepper (to taste)
Instructions
- Prepare Tomatoes and Blueberries: Halve the cherry tomatoes and place them in a serving bowl. Sprinkle the fresh blueberries evenly over the tomatoes.
- Shape Mozzarella: Use small star-shaped cookie cutters or a knife to cut stars from the fresh mozzarella slices. Arrange these mozzarella stars attractively over the tomatoes and blueberries in the bowl.
- Make Dressing: In a small bowl, whisk together the honey and olive oil until well combined to create a smooth dressing.
- Dress Salad: Drizzle the honey and olive oil dressing evenly over the salad. Season with salt and freshly ground black pepper to taste, then top the salad with fresh basil leaves.
- Chill Before Serving: Refrigerate the salad for 15 minutes to allow the flavors to meld and maximize freshness before serving.
Notes
- Use star-shaped cookie cutters to add a fun presentation but you can also simply slice the mozzarella into small pieces if cutters aren't available.
- For a vegan version, substitute mozzarella with a plant-based cheese alternative.
- Adjust the amount of honey based on your preferred level of sweetness.
- Chilling the salad enhances the flavors and makes it more refreshing, but you can serve it immediately if desired.
