- 390 g (13.75 oz) jar of cherries in Kirsch (including the liquid)
- 500 ml (2 cups + 2 tbsp) cherry juice
- 1 bottle prosecco or champagne, well chilled
- 1 lemon
- 4 tbsp caster or superfine sugar
- 1/2 tsp edible gold glitter/luster powder
- Black cherries (fresh or from a jar) for garnish
Instructions
- Reduce Cherry Juice: Pour the liquid from the jar of cherries in Kirsch along with the cherry juice into a small saucepan. Bring the mixture to a boil, then reduce the heat and let it simmer until the liquid reduces by approximately one-third, which should take around 20 minutes.
- Blend Cherry Puree: Allow the reduced juice to cool. Then return the cherries to the mixture and blend everything together using a hand blender until smooth. You can cover and refrigerate this cherry puree for 1-2 days if not using immediately.
- Prepare Glass Rims: Slice the lemon in half and run it around the rims of the serving glasses to moisten them. On a small plate, mix the caster sugar with the edible gold glitter or luster powder. Dip the moistened rims of the glasses into this glittery sugar mixture to coat them beautifully.
- Assemble the Bellini: Pour about one-third of the glass with the black cherry puree. Top up the rest of the glass with chilled prosecco or champagne. For garnish, skewer 2-3 black cherries and place them on top of the glass. Serve immediately for a sparkling, flavorful experience.
